INGREDIENTS
Vegetables
- 100g tsuru-murasaki leaves and stems
- đź§… 1/2 onion, thinly sliced
- 🌽 100g whole corn kernels
Dry Ingredients
- 1 tbsp all-purpose flour
- đź§‚ 1/2 tsp salt
Tempura Batter
- 5 tbsp all-purpose flour
- 2 tbsp potato starch
- đź’§ 100cc cold water
Oil
- Enough salad oil to fill 3cm height in a pot
STEPS
Separate tsuru-murasaki leaves and stems. Cut stems diagonally into 3cm pieces. Thinly slice the onion.
In a bowl, mix tsuru-murasaki, onion, corn, all-purpose flour, and salt.
In a separate bowl, mix the tempura batter ingredients: all-purpose flour, potato starch, and cold water.
Add the vegetable mixture to the tempura batter and mix gently.
Heat salad oil in a pot to 180°C. Use a spatula to drop flat portions of the batter into the oil. Fry until crispy and golden.
