Cut bamboo shoots into 1.5 cm pieces and slice the onion thinly.

In a pot, combine bamboo shoots, onion, mackerel, sake, and water. Heat over medium heat until boiling, then cover and simmer on low heat for 3–4 minutes.

Dissolve miso into the soup and simmer briefly. Serve in bowls and garnish with chopped green onion.
