INGREDIENTS

  • Rice

    • 🍚 1 bowl cooked rice (120g)
  • Fish

    • 🐟 1 slice sea bream (120g)
  • Seasoning

    • 🧂 Pinch of salt
    • 1 tsp sake
    • 🧂 1/3 tsp salt
  • Broth

    • 💧 200ml water
    • 3cm dried kombu

Place water and dried kombu in a pot.

Pat the sea bream dry with paper towels and sprinkle with a pinch of salt.

Line a baking tray with aluminum foil, place the sea bream on it, and bake in a toaster for 4–5 minutes until cooked and golden. Remove bones and skin, then flake the fish.

Rinse the cooked rice with water to remove excess starch, then drain.

Heat the pot with kombu water over medium heat. Remove the kombu just before boiling. Add sake, salt, and rice, stirring to combine. Once boiling, add the flaked fish, cover, and simmer on low heat for 3–4 minutes.
