STEPS
Clean and trim the spring chives, removing excess dirt and moisture.
Bring 5 cups of water to a boil and add 2 pinches of coarse salt. Blanch the chives from root to leaf for a few seconds.
Transfer the blanched chives to cold water to cool down and remove excess heat. Drain thoroughly.
Wrap the chive leaves around the white stem to form a spiral shape. Serve with chili sauce or mustard sauce.
