INGREDIENTS
Fish
- 🐟 250g salmon fillets
Vegetables
- 🥬 400g daikon radish, sliced
- Chopped daikon leaves, as needed
Liquid
- 💧 200cc water
Seasoning
- 1/3 tsp Japanese dashi powder
- 2 slices ginger
- 1.5 tbsp miso paste
- 1 tbsp sake
- 🍬 1 tsp sugar
- 2 tbsp mirin
STEPS
Slice the daikon radish into 2cm thick pieces and peel the skin. Cut into quarters. Chop daikon leaves into 5mm pieces.
Cut the salmon fillets into thirds.
In a pan, add daikon, water, and dashi powder. Heat over medium heat until boiling, then add sake, sugar, mirin, and ginger. Cover and simmer on low heat for 10 minutes.
Dissolve miso paste into the mixture, then add salmon. Bring to a boil, cover, and simmer on low heat for 10–15 minutes until the salmon is cooked and daikon absorbs the flavors.
Add daikon leaves and cook briefly.
