Simmered Burdock and Shiitake Mushrooms

  • Vegetables

    • 2 burdock roots (120g)
    • 🍄 4 dried shiitake mushrooms
  • Liquids

    • 150cc shiitake soaking liquid
  • Seasonings

    • 1 tbsp sake
    • 2 tbsp mirin
    • đź§‚ 1 tbsp soy sauce
    • 1/3 tsp dashi powder

Place dried shiitake mushrooms in a bowl with plenty of water to rehydrate. Squeeze out excess water and reserve 150cc of the soaking liquid. Remove the stems from the mushrooms.

Wash the burdock roots thoroughly to remove dirt. Cut into 5cm lengths and then halve them lengthwise. Soak in water for 2 minutes and drain.

In a pot, combine the shiitake soaking liquid, burdock, and rehydrated shiitake mushrooms. Bring to a boil over medium heat. Skim off any scum, add the seasonings, cover, and simmer on low heat for 10–12 minutes. Let cool with the lid on.
