  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tbsp sugar
    • 2 tbsp soy sauce
    • đź’§ 200ml water

Cut the anago into halves lengthwise.

In a pot, combine sake, mirin, sugar, soy sauce, and water. Heat over medium heat until boiling.

Turn off the heat and place the anago skin-side down into the pot. Cover with a drop lid and simmer on low heat for 15 minutes.
