INGREDIENTS
Seafood
- 🦪 3 sashimi-grade scallops
- 🍤 6 peeled shrimp (90g)
- 3 tbsp salmon roe
Vegetables
- 2 snow peas
Egg Mixture
- 🥚 2 eggs
- 1 tsp soy sauce
- 2/3 tsp Japanese dashi powder
- đź’§ 300ml water
STEPS
Remove the strings from the snow peas. Boil water in a pot, blanch the snow peas briefly, and drain. Once cooled, cut diagonally into halves.
Cut the scallops in half.
In a bowl, crack the eggs and mix. Add the remaining egg mixture ingredients and strain to create a smooth egg mixture.
Divide the scallops and shrimp evenly into heatproof bowls. Pour the egg mixture evenly into the bowls.
Place the bowls in a steamer with boiling water. Cover and steam over medium heat for 2 minutes.
Reduce to low heat by slightly opening the steamer lid and steam for 12–15 minutes.
Top each bowl with salmon roe and snow peas evenly.
