INGREDIENTS

  • Fish

    • 🐟 2 pieces of salted mackerel (170g)
  • Coating

    • Potato starch as needed
  • Oil

    • Salad oil as needed
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🧂 1 tsp soy sauce
    • 1/2 tsp grated ginger

Pat dry the salted mackerel and cut into bite-sized pieces.

Place the seasoning ingredients (sake, mirin, soy sauce, grated ginger) into a plastic bag and mix evenly. Add the mackerel, gently massage to coat, remove air from the bag, seal, and refrigerate for 15 minutes. Remove the mackerel, pat dry, and coat with potato starch.

Heat salad oil in a frying pan to 170°C (about 2cm depth). Fry the mackerel pieces for about 2 minutes until crispy.
