    • 500g pork belly block
  • Seasoning

    • A pinch of pepper
  • Vegetables

    • 1 slice of ginger
  • Liquid

    • 100cc sake

Rub salt onto the pork belly, wrap it in kitchen paper and plastic wrap, then refrigerate overnight.

In a pot, add the pork (after removing the paper and wrap), enough water to cover, sliced ginger, and sake. Heat until boiling, skim off any scum, then simmer on low heat for about 1 hour. Let it cool in the pot.

Pat the pork dry, slice into bite-sized pieces, and sprinkle with pepper.
