Rice Cooker Simmered Yellowtail and Daikon

INGREDIENTS

  • Fish

    • 🐟 200g yellowtail fillets
  • Vegetables

    • 🥬 300g daikon radish
    • 2 slices ginger
  • Seasoning

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tsp sugar
    • 2 tbsp soy sauce
    • 💧 200ml water

Cut the daikon into 2cm thick slices, peel the skin, and halve them. Place on a microwave-safe plate, sprinkle with 1 tbsp water, cover with plastic wrap, and microwave at 600W for 5 minutes. Rinse and drain.

Cut the yellowtail into thirds. Sprinkle lightly with salt and let sit for 10 minutes. Place on a strainer and pour boiling water over them. Pat dry with paper towels.

Add all seasoning ingredients (sake, mirin, sugar, soy sauce, water) into the rice cooker pot and mix. Add daikon, yellowtail, and ginger slices. Cook using the regular rice cooking setting.
