INGREDIENTS

  • Meat

    • 200g thinly sliced pork loin
  • Vegetables

    • 1 bag (200g) bean sprouts
    • 5 shiso leaves, sliced
  • Condiments

    • 2 ume plums, pitted and mashed
    • 1 tbsp sake
    • 1 tbsp mirin
    • 1 tsp concentrated soy sauce (3x)
    • 1 tbsp sesame oil

STEPS

Slice the shiso leaves thinly and pit the ume plums, mashing them until smooth.

Boil water in a pan (2cm depth), add bean sprouts, and blanch until tender. Drain and let cool.

Add sake to the same pan, cook the pork slices one by one until their color changes, flipping as needed. Drain and let cool.

Microwave mirin in a heatproof container for 30-40 seconds at 600W without covering.

Mix mashed ume plums, mirin, soy sauce, and sesame oil in a bowl. Add pork and bean sprouts, then toss to combine.

Serve on a plate and garnish with sliced shiso leaves.
