STEPS
Finely chop the perilla leaves. Heat sesame oil (for miso sauce) in a pan over low heat, add the perilla leaves, and lightly sauté. Add the miso, mirin, sake, and sugar, mixing well to create the sauce.
Cut the pork belly into bite-sized pieces. Heat sesame oil (for pork) in a frying pan over medium heat, cook the pork belly until both sides are browned, remove excess oil, and season with salt and pepper.
