INGREDIENTS

- 2 turnips with leaves (160g)
- 🍋 1/2 lemon
Condiments
- 1 tbsp shio koji
- đź§‚ 1/3 tsp salt
STEPS
Cut the turnip leaves into 3cm pieces. Peel the turnips, cut them in half lengthwise, and slice thinly. Place the turnips, leaves, and salt in a bowl, massage until softened, and let sit. Squeeze out excess water. Slice the lemon thinly (2-3 slices) and squeeze the juice from the remaining lemon.
In a storage bag, combine the turnips, leaves, lemon slices, lemon juice, and shio koji. Massage the mixture, remove air from the bag, seal it, and refrigerate for half a day.
