INGREDIENTS
Seaweed
- 20cm dried kombu
Liquid
- 150cc vinegar
- 150cc water
Seasoning
- 🍬 3 tbsp sugar
- đź§‚ 1/3 tsp salt
- Pinch of sliced chili
STEPS
Wipe the dried kombu lightly with a kitchen paper and cut into 1cm wide strips along its longer side.
Place the kombu and vinegar in a bowl and let it sit for about 30 minutes.
Transfer the kombu along with the vinegar to a pot, add the seasoning ingredients (sugar, salt, chili, and water), and heat over medium heat. Once boiling, reduce to low heat and simmer for about 20 minutes.
Line a baking tray with parchment paper and arrange the kombu strips on it. Preheat the oven to 110°C and bake for about 1 hour to dry.
Flip the kombu strips, then bake again at 110°C for another hour to complete the drying process. Remove and let cool completely.
