Okahijiki and Kimchi Tororo Soba

  • Noodles

    • 🍜 100g dried soba noodles
  • Vegetables

    • 50g okahijiki
    • 125g nagaimo (5cm piece)
  • Condiments

    • 50g kimchi
    • 100cc 2x concentrated mentsuyu
  • Liquids

    • đź’§ 200cc water

Cut okahijiki into bite-sized pieces. Place nagaimo in a bag and lightly pound it with a rolling pin until slightly mashed.

Boil water in a pot and blanch okahijiki for 30 seconds. Cool it in cold water. Using the same pot, cook soba noodles according to package instructions, rinse under cold water, and drain well.

Arrange soba noodles in a serving bowl. Add mentsuyu, water, okahijiki, nagaimo, and kimchi on top. Garnish with chopped green onions.
