INGREDIENTS

- 🍗 1 piece (250g) skinless chicken breast
- 2 tbsp sake
- 🍬 1 tbsp sugar
- đź§‚ 1 tsp salt
- đź’§ 600ml water
Negi Shio Sauce
- đź§… 1/2 stalk green onion, finely chopped
- 🍬 1/2 tsp sugar
- đź§‚ 1/2 tsp salt
- đź’§ 6 tbsp chicken boiling liquid
- 1/2 tbsp sesame oil
STEPS
Finely chop the green onion.
Pierce the chicken breast all over with a fork.
Mix sake, salt, and sugar in a storage bag, add the chicken, massage, and refrigerate for 30 minutes.
Boil water in a pot, add the chicken, boil for 10 minutes, then turn off the heat, cover, and let cool for 1 hour. Reserve 6 tbsp of the boiling liquid.
Mix all sauce ingredients in a bowl to make the negi shio sauce.
Slice the chicken into bite-sized pieces and drizzle with negi shio sauce.
