INGREDIENTS
Noodles
- 🍜 2 servings cooked udon noodles
Fish
- 🐟 1 can (190g) miso-simmered mackerel
Egg
- 🥚 1 egg
Vegetables
- 🧅 1/2 stalk sliced green onion
- 🍄 2 shiitake mushrooms
Seafood
- 🍥 4 slices kamaboko
Seasoning
- 2 tbsp mirin
- 1 tbsp miso
- 💧 400 ml water
STEPS
Slice the green onion diagonally and trim the shiitake mushroom stems.
In a pot, add the canned mackerel with its liquid, along with the seasoning ingredients. Heat until boiling, then add the udon noodles and shiitake mushrooms. Simmer for 2–3 minutes over medium heat.
Top with green onion, kamaboko slices, and crack the egg into the pot. Cook until the egg reaches your desired firmness.
