- 🐟 8 small horse mackerel
Spices
- 1 piece of ginger, julienned

- 1 tbsp miso
- 💧 200 ml water
STEPS
Prepare the small horse mackerel by removing the scales, guts, and gills. Cut off the heads.
Julienne the ginger.
In a pot, combine the seasonings (sake, mirin, sugar, miso, and water) and ginger. Bring to a boil, then add the fish. Cover and simmer on low heat for 15 minutes.
Dissolve the miso into the pot and cook over medium heat until the sauce thickens.
