INGREDIENTS
Vegetables
- 100g lotus root
- 🥕 50g carrot
Seaweed
- 1 tbsp dried wakame
Oil
- 1/2 tsp sesame oil
Soup Base
- đź’§ 400ml water
- 1/2 tsp chicken stock powder
- 1/3 tsp grated ginger
- đź§‚ 1/3 tsp salt
- Pinch of pepper
STEPS
Peel and slice the lotus root and carrot into thin pieces.
Rehydrate the dried wakame in water for 5 minutes, then drain.
In a pot, bring 400ml water to a boil and add chicken stock powder, grated ginger, salt, and pepper.
Add the lotus root and carrot slices to the pot and simmer for 5 minutes.
Add the rehydrated wakame and cook for another 2 minutes.
Turn off the heat and drizzle sesame oil over the soup before serving.
