INGREDIENTS
Vegetables
- 🥬 1/4 head cabbage, finely chopped
- 1/2 yellow bell pepper, diced
- 1/2 red bell pepper, diced
- 🧅 1/2 onion, finely chopped
- 🌽 2/3 can of corn, drained
Sauce
- 🧈 9 tbsp mayonnaise
- 2 tbsp vinegar
- 🧂 3 tbsp sugar
- 🍋 1 tbsp lemon juice
- A pinch of black pepper
STEPS
Finely chop the cabbage into corn kernel-sized pieces.
Dice the yellow and red bell peppers into corn kernel-sized pieces. Chop the onion similarly.
Drain the canned corn thoroughly using a sieve.
Combine all the chopped vegetables and corn in a large mixing bowl.
Mix the sauce ingredients (mayonnaise, vinegar, sugar, lemon juice) until the sugar dissolves completely.
Add the sauce to the vegetables and sprinkle black pepper. Mix well.
Serve immediately or store in the fridge. It pairs well with burgers, chicken, or as a side dish for parties.
