Kanpyo and Ham Salad

INGREDIENTS

  • Protein

    • 4 slices ham
  • Vegetables

    • 20g dried kanpyo
    • 🥒 1/2 cucumber (50g)
  • Seasoning

    • 1/2 tsp consomme
    • 1/3 tsp grated ginger
    • 2 tbsp mayonnaise
    • 1 tsp soy sauce

Wash the dried kanpyo briefly with water and squeeze out the excess moisture. Rub with a pinch of salt, then rinse thoroughly and squeeze out the water again. Soak in plenty of water for 10–20 minutes to rehydrate, then squeeze out the water.

Boil water in a pot, add the kanpyo and consomme, and cook for 5 minutes. Let it cool in the water, then squeeze out the moisture and cut into 3cm pieces.

Julienne the cucumber into thin strips.

Cut the ham in half, then slice into 5mm strips.

Combine all ingredients in a bowl and mix well.
