INGREDIENTS
Noodles
- 1 bundle dried soba noodles
Fish
- 1 filleted iwashi (sardine)
Coating
- 1 tbsp potato starch
Cooking Oil
- 1/2 tbsp salad oil
Broth
- 3 tbsp concentrated mentsuyu
- 300 ml hot water
Sauce
- 1 tbsp sake
- 1/2 tbsp mirin
- 🍬 1 tsp sugar
- 1/2 tbsp soy sauce
Garnish
- đź§… Chopped green onion, as needed
STEPS
Coat both sides of the iwashi with potato starch.
Heat salad oil in a frying pan and cook the iwashi on both sides over medium heat until fully cooked. Add the sauce ingredients and simmer until glazed.
Boil the soba noodles in a pot of hot water according to package instructions. Drain well.
In a serving bowl, mix mentsuyu and hot water. Add the soba noodles, top with the cooked iwashi, and garnish with chopped green onion.
