  • Fish

    • 🐟 1 fillet mackerel (140g)
  • Vegetables

    • 🧅 1/3 stalk scallion
    • 1 knob ginger
  • Oil

    • Enough salad oil for frying
  • Seasoning

    • Red chili threads as needed
    • 1/2 tbsp sake
    • 1/2 tbsp soy sauce
    • Cornstarch as needed
  • Sauce

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🧂 1/4 tsp salt
    • 1 tsp soy sauce
    • 1/3 tsp dashi powder
    • 💧 150ml water
  • Thickener

    • 1/2 tbsp cornstarch
    • 💧 1/2 tbsp water

STEPS

Pat the mackerel dry with a paper towel and cut into bite-sized pieces.

Place mackerel, sake, and soy sauce in a plastic bag, massage lightly, and let marinate for 5 minutes.

Slice the scallion diagonally and cut the ginger into thin strips.

Pat the mackerel dry again and coat with cornstarch.

Heat salad oil in a frying pan to 170°C and fry the mackerel until crispy. Remove oil and clean the pan.

Add sauce ingredients (sake, mirin, salt, soy sauce, dashi powder, water) to the pan and bring to a boil. Add scallion and ginger, then simmer. Stir in the cornstarch mixture to thicken.

Plate the fried mackerel, pour the sauce over, and garnish with red chili threads.
