INGREDIENTS
Rice
- 🍚 2 bowls cooked rice (400g)
Fish
- 🐟 150g flounder sashimi
Vegetables
- 4 shiso leaves, sliced
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 🧂 1/4 tsp salt
- 10g salted kombu
- 1/3 tsp yuzu pepper
- 🌾 1 tsp white sesame seeds
STEPS
Slice the shiso leaves thinly.
Chop the salted kombu roughly.
Prepare the flounder by slicing it thinly at an angle.
Mix sake and mirin in a bowl, microwave uncovered for 30 seconds at 600W, and let cool. Add the remaining seasonings and mix well. Marinate the flounder in the mixture, cover tightly with plastic wrap, and refrigerate for 10 minutes.
Serve the rice in bowls, top with shiso leaves and marinated flounder.
