INGREDIENTS
Fish
- 1 fillet (250g) cutlassfish
Coating
- Potato starch, as needed
Cooking Oil
- Salad oil, as needed
Seasoning
- 1 tbsp sake
- 1 tbsp soy sauce
- 1 tsp grated ginger
Garnish
- 🍋 2 wedges lemon
STEPS
Fillet the cutlassfish into three pieces along the backbone and cut into bite-sized pieces.
Mix the seasoning ingredients in a bowl, add the cutlassfish, and let it marinate for about 10 minutes. Lightly drain the excess liquid and coat the fish with potato starch.
Heat salad oil in a pot to 170°C (about 2cm depth) and fry the fish until golden brown. Fry the bones longer for crispy bone crackers.
Serve the fried fish on a plate and garnish with lemon wedges.
