STEPS
Place beef tripe and salt in a bowl, knead thoroughly, rinse with water, and drain.
Mix beef tripe with sake, sugar, soy sauce, and grated garlic in a bowl. Let it marinate for 15 minutes.
Place potato starch and lightly drained marinated tripe into a plastic bag. Shake to coat evenly.
Heat salad oil in a pot to 170°C. Fry the coated tripe until golden brown.
