Rice Bowl Ingredients

- 🍆 1 medium eggplant, diced
- đź§… 1/2 onion, chopped
- đź§… 1 piece of green onion, sliced
- 1 spicy chili, sliced
- 1/2 red chili, sliced
- 🥚 1 egg
- A small amount of cooking oil
Seasoning Ingredients
- 1/2 tbsp oyster sauce
- đź§‚ 1/4 tbsp sugar
- 1 tbsp soy sauce
- đź’§ 4 tbsp water
- 1 tsp sesame oil
- A small amount of black pepper
STEPS
Dice the eggplant into small cubes. Chop the onion, green onion, red chili, and spicy chili into slices.
Heat a pan with a small amount of cooking oil. Add the eggplant, onion, and green onion, and stir-fry until the onion becomes translucent.
Add water, oyster sauce, sugar, and soy sauce to the pan. Stir-fry until the ingredients are well-coated and the flavors are absorbed.
Add the sliced chilies and stir-fry briefly. Turn off the heat and mix in sesame oil and black pepper.
Prepare scrambled eggs in a separate pan. Serve the stir-fried eggplant mixture over rice and top with scrambled eggs.
