Cut open the mentaiko and remove the contents, then flake it.

Shred the cabbage and place it in a plastic bag with salt. Massage the cabbage, squeeze out excess water, and set aside. Rehydrate the wakame in water, squeeze out excess water, and chop into bite-sized pieces if necessary.

In a bowl, mix the seasoning ingredients (soy sauce, olive oil, salt, and pepper). Add the flaked mentaiko and mix well. Combine the cabbage and wakame, then mix thoroughly.
