- 2 tbsp sake
- 2 tbsp mirin
- 2 tbsp soy sauce
STEPS
Cut the bamboo shoots into bite-sized pieces.
In a pot, combine the dashi stock, sake, mirin, soy sauce, and bamboo shoots. Heat over medium heat and cover with a drop lid.
Simmer for about 25 minutes until the liquid reduces to about one-third.
Serve in a dish and sprinkle bonito flakes on top.
