INGREDIENTS
Main Ingredients
- 🍆 4 eggplants
- 🧅 Chopped green onion, as needed
- Grated ginger, as needed
- Vegetable oil, as needed
Seasoning
- 💧 200ml water
- 1/2 tsp dashi powder
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 2 tbsp soy sauce
STEPS
In a pot, combine all seasoning ingredients (☆) and bring to a boil. Once boiled, remove from heat and let it cool to room temperature.
Cut off the stems of the eggplants and make shallow cuts about 5mm apart along the skin.
Heat a pot of vegetable oil to 170°C and fry the eggplants, turning them occasionally, until they become tender (about 5 minutes).
Place the fried eggplants into the cooled seasoning mixture while still hot. Let them cool to room temperature, then cover with plastic wrap and refrigerate for 1 hour to allow the flavors to meld.
Serve the marinated eggplants on a plate and garnish with chopped green onion and grated ginger.
