Cut the avocado in half, remove the seed, peel the skin, and slice into 1.5cm thick pieces. Sprinkle with salt and pepper.

Place the avocado slices and potato starch into a plastic bag. Shake until the avocado is fully coated.

Heat salad oil in a pot to 170°C (about 2cm depth). Fry the avocado slices until crispy. Serve with lemon wedges and sweet chili sauce.
