STEPS
Preheat the oven to 325°F (165°C) and spray two 9x5-inch loaf pans with cooking spray.
In a large bowl, mix brown sugar, yogurt, molasses, vegetable oil, and eggs until thoroughly combined.
Stir in cinnamon, ginger, nutmeg, cloves, baking soda, baking powder, and salt.
Gently mix in shredded zucchini, then stir in flour until combined.
Pour the batter into the prepared loaf pans.
Bake in the preheated oven for 50-60 minutes until browned and a toothpick inserted into the center comes out clean.
Cool in the pans for 10 minutes, then transfer to a wire rack to finish cooling.
