INGREDIENTS
Cookie dough
- ½ cup vegetable shortening
- 🥛 2 cups milk
- 2 cups white sugar
- 🥚 2 eggs
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon baking soda
- 🧂 1 ½ teaspoons salt
Filling
- 🥛 1 cup milk
- 1 cup butter at room temperature
- 1 cup vegetable shortening
- 2 cups white sugar
- 2 tablespoons all-purpose flour
- 2 teaspoons vanilla extract
- 2 (7 ounce) jars marshmallow creme
STEPS
Preheat the oven to 375°F (190°C). Prepare 25 pieces of plastic wrap (5 inches square) and set aside.
For cookies, beat 1/2 cup vegetable shortening, 2 cups milk, 2 cups sugar, eggs, and 2 teaspoons vanilla extract until smooth and creamy.
In a separate bowl, whisk the flour, cocoa powder, baking soda, and salt. Mix the dry ingredients into the wet ingredients until smooth.
Scoop batter into small dollops on baking sheets, spaced 2 inches apart. Bake 8 to 10 minutes until set. Cool on racks.
For filling, microwave 1 cup milk till hot (1 to 2 minutes). Mix milk, butter, shortening, sugar, flour, vanilla extract, and marshmallow creme. Beat on high for 5 to 10 minutes until fluffy.
Spread 1 1/2 tablespoons frosting onto the flat side of a cookie. Top with another cookie, flat-side down. Wrap in plastic wrap and freeze.
To serve, thaw pies for 10 to 15 minutes until cold but not frozen.
