- 🎃 1 pumpkin (500g, peeled and diced)
- 🍆 2 eggplants (sliced)
- 🥬 1/4 head of cabbage (chopped finely)
- 🥒 1 zucchini (thinly sliced)
STEPS
Dice the pumpkin and boil it in hot water for 10 minutes.
Heat a pan and stir-fry the eggplant and zucchini with a bit of olive oil.
Add the cabbage and stir-fry with the eggplant and zucchini for an additional 5 minutes.
Add the boiled pumpkin to the pan and simmer over medium heat for 10 minutes.
Continue stirring until everything is mixed well and all ingredients become tender.
