INGREDIENTS
Vegetables
- 🥕 1 carrot (thinly sliced)
- 2 stalks of celery (sliced)

- 1 bunch of spinach (roughly chopped)
Seasonings

- Black pepper to taste
- 2 tsp olive oil
- 4 cups vegetable broth
STEPS
Heat olive oil in a pot and sauté the finely chopped onion.
Add the thinly sliced carrot and sliced celery, and stir-fry until softened.
Pour in the vegetable broth, bring to a boil, then simmer on low heat for about 10 minutes.
Add the spinach, simmer for another 2 minutes, and season with salt and black pepper.
