INGREDIENTS
Dry Ingredients
- 2 Âľ cups gluten-free all purpose baking flour
- 1 ÂĽ cups white sugar
- 1 teaspoon baking soda
- 1 teaspoon gluten-free baking powder
Wet Ingredients
- đź’§ 1 cup cold water
- â…“ cup vegetable oil
- 1 teaspoon vanilla extract
Filling and Decoration
- 1 (14 ounce) can cream of coconut
- 2 teaspoons vanilla extract
- 2 tablespoons white sugar
- 🍑 1 (15 ounce) can canned peaches in syrup, drained and cubed
- 2 tablespoons confectioners' sugar, or to taste
STEPS
Preheat oven to 375°F (190°C). Grease 3 8-inch cake pans and line with parchment paper.
Combine gluten-free flour, sugar, baking powder, and baking soda in a large bowl. In a separate bowl, mix water, vegetable oil, and vanilla. Make a well in the center of the flour mixture and pour the wet mixture into it. Mix well until the batter is smooth.
Divide the cake batter evenly among the prepared pans. Allow the batter to rest for 15 minutes.
Bake the cakes until a toothpick inserted into the center comes out clean, about 45 minutes. Remove from the oven and let cool in the pans for 5 minutes before transferring to wire racks to cool completely.
Pour cream of coconut into a mixing bowl and chill in the freezer for 5 minutes. Remove and whisk in vanilla extract and sugar until stiff peaks form.
Assemble the cake: Place one cake layer on a serving plate, pipe half the coconut cream on top, and layer with half the peaches. Repeat with the second layer, spreading the remaining cream and peaches. Lightly dust the top with confectioners' sugar.
