INGREDIENTS
Pasta
- 🍝 160g fettuccine
Seafood
- 50g uni
Vegetables
- 🧄 1 clove garlic, minced
Oils and Fats
- 1 tbsp olive oil
- 🧈 20g salted butter
Condiments
- 1 tsp anchovy paste
- 🍅 2 tbsp tomato puree
Liquids
- 2 tbsp white wine
- 🥛 200ml heavy cream
Seasonings
- 🧂 Pinch of salt and pepper
STEPS
Mince the garlic clove.
Heat olive oil in a pan over low heat, add minced garlic, and sauté until fragrant. Add white wine and cook until alcohol evaporates.
Add tomato puree and anchovy paste to the pan, and simmer over medium heat until slightly thickened.
Pour in heavy cream and cook over medium heat until the sauce thickens. Season with salt and pepper.
Boil fettuccine for 1 minute less than the package instructions, drain, and mix into the sauce.
Add 40g uni and salted butter to the pan, stirring until evenly combined.
Plate the pasta and top with the remaining 10g uni for garnish.
