Tuna and Bitter Melon Stir-fry

    • 150g firm tofu
    • 1 can (70g) oil-packed tuna
    • 🥚 1 egg
  • Vegetable

    • 1/2 bitter melon (125g), sliced
  • Seasoning

    • 2 tsp soy sauce
    • đź§‚ 1/3 tsp salt
    • Pinch of pepper
    • 1 tsp sesame oil
  • Topping

    • 4g bonito flakes

Cut the bitter melon in half lengthwise and remove seeds and pith with a spoon. Slice thinly (3–4mm). Rub with 1/4 tsp salt and let sit for 5 minutes. Rinse and squeeze out excess water. Pat the tofu dry and cut into 1cm slices.

Crack the egg into a bowl and beat to make a whisked egg.

In a large microwave-safe container, combine bitter melon, tofu, tuna, and seasonings. Pour the whisked egg over the mixture. Cover loosely with plastic wrap and microwave at 600W for 3–4 minutes. Add bonito flakes and mix well.
