    • 100g ground pork
    • 🥚 2 eggs, beaten
  • Vegetables

    • 40g vermicelli noodles
    • 🍅 2 tomatoes, chopped
    • đź§… 30g chopped green onion
  • Seasonings

    • đź§„ 1/2 tsp grated garlic
    • 1/2 tsp grated ginger
    • 1/2 tsp doubanjiang
    • 1.5 tbsp salad oil
    • 1 tsp sesame oil
  • Mapo Sauce

    • 1 tbsp sake
    • 🍬 1 tsp sugar
    • 1/2 tbsp soy sauce
    • 1 tbsp miso
    • đź’§ 150ml water

Cut the tomatoes into wedges and then halve them. Chop the green onion and mix the Mapo sauce ingredients in a bowl.

Heat 1 tbsp salad oil in a pan over medium heat, add the beaten eggs, and stir until semi-cooked. Remove and set aside.

Add the remaining salad oil to the pan, then stir-fry ground pork, green onion, garlic, ginger, and doubanjiang until the pork changes color. Add half of the tomatoes and cook until the skins slightly peel.

Add the Mapo sauce mixture and bring to a boil. Add vermicelli noodles and simmer for 5 minutes until the liquid is absorbed. Add the remaining tomatoes, cooked eggs, and sesame oil, then mix well.
