  • Broth

    • 6 cups water or stock
    • 2 tsp shrimp powder
    • 1 tsp anchovy powder
  • Main Ingredients

    • 1 block tofu
    • 1 to 1.5 cups chopped chives
    • 2 tbsp perilla powder
  • Seasoning

    • đź§‚ 1/2 tsp salt
    • 1 tbsp anchovy sauce
    • 1/2 tbsp soy sauce

STEPS

Prepare the broth by boiling 6 cups of water or stock with 2 tsp shrimp powder and 1 tsp anchovy powder.

Remove the chalaza from 6 eggs if possible.

Mash 1 block of tofu until smooth.

Mix the eggs with chopped chives, 2 tbsp perilla powder, and 1/2 tsp salt. Stir well to coat the perilla powder evenly.

Add the mashed tofu to the boiling broth, then season with 1 tbsp anchovy sauce and 1/2 tbsp soy sauce.

Pour the egg mixture into the boiling broth in a circular motion. Do not stir immediately.

Once the edges start to boil, gently stir the soup with a ladle. Optionally, sprinkle with black pepper.
