    • 200g yellowtail fillets
    • sufficient amount of flour
    • 2 tsp salad oil
  • Marinade

    • 1 tbsp sake
    • 1 tbsp shio koji
  • Sauce

    • 1 tbsp sake
    • 1 tbsp mirin
    • 🍬 1 tsp sugar
    • 1 tbsp soy sauce

Pat the yellowtail fillets dry with a paper towel. Mix sake and shio koji in a tray, coat the fillets, and refrigerate for 30 minutes. Remove excess marinade with a paper towel.

Lightly coat the marinated yellowtail fillets with flour.

Heat salad oil in a frying pan over medium-low heat. Cook the fillets until golden brown on one side, then flip and cook for another 3 minutes until fully cooked.

Wipe off excess oil with a paper towel, add the sauce ingredients, and simmer until the fillets are glazed.
