Cut the chicken breast into bite-sized pieces. Place in a container, add sake, salt, and pepper, and let it sit for 10 minutes. Coat with potato starch. Slice the bamboo shoot thinly after halving it horizontally.

Heat sesame oil in a frying pan over medium heat. Add the chicken and cook until fully cooked.

Add the bamboo shoots and sauce ingredients (sake, mirin, soy sauce) to the pan. Cook over medium heat for 3–4 minutes. Garnish with green onion and chili threads if desired.
