Tarako Salad with Lemon Baguette

INGREDIENTS

  • Baguette

    • 🍞 8 slices baguette
    • 🌿 1 tsp minced parsley
    • 🧈 2-3 tbsp softened salted butter
  • Tarako Cream

    • 1 piece tarako
    • 80g sour cream
    • 4 tbsp breadcrumbs
    • 🍋 1 tbsp lemon juice
    • 1 tbsp olive oil
    • 🧂 Pinch of salt and pepper
  • Cucumber Mint Salad

    • 🥒 1 cucumber
    • 🌿 5-6 sprigs mint
    • 1 tsp mustard
    • 🥛 2 tbsp unsweetened yogurt
    • 🧂 Pinch of salt and pepper

STEPS

Prepare the tarako cream. Remove the thin skin from the tarako and scrape out the flesh into a bowl. Add the remaining ingredients and mix well.

Make the cucumber mint salad. Cut off the ends of the cucumber and dice into 5mm cubes. Roughly chop the mint. Combine all ingredients in a bowl and mix well. Chill in the refrigerator along with the tarako cream.

Spread 1 tsp of butter on each baguette slice and sprinkle with lemon zest and parsley.

Toast the baguette slices in a toaster oven for 2-3 minutes until lightly golden. Serve the tarako cream and cucumber salad in glasses or bowls, accompanied by the baguette slices.
