Tarako and Mizuna Ankake Tofu

INGREDIENTS

    • 250g silken tofu
    • 1 piece (50g) tarako
    • 1/6 bunch mizuna
  • Seasonings

    • 2 tsp sake
    • 1 tsp mirin
    • 2 tsp soy sauce
    • 1/2 tsp dashi powder
    • 250ml water
  • Thickening Agent

    • 1 tbsp potato starch
    • 2 tbsp water

STEPS

Wrap the tofu in kitchen paper and heat it in a 600W microwave for 2 minutes. Let it cool and cut into 2cm cubes.

Make a slit in the tarako skin and remove the contents.

Trim the roots of the mizuna and cut into 3–4cm pieces.

In a pot, add tarako and the seasonings (sake, mirin, soy sauce, dashi powder, and water). Heat over medium heat until it boils.

Add the potato starch mixture to the pot to thicken the sauce. Then, add the mizuna and turn off the heat, mixing well.

Place the tofu on a serving dish and pour the sauce with mizuna over it.
