INGREDIENTS
Fish
- 🐟 2 fillets of cod
Seasoning
- 🧂 1/3 tsp salt
Breading
- As needed all-purpose flour
- 🥚 1 egg
- As needed breadcrumbs
Cooking Oil
- 4 tbsp olive oil
Vegetables
- As needed lettuce
- 🍅 As needed cherry tomatoes
STEPS
Crack the egg into a container large enough to hold the cod fillets and whisk it.
Sprinkle salt on both sides of the cod fillets and let them sit for about 2 minutes until moisture appears on the surface.
Lightly coat the cod fillets with flour, then dip them into the whisked egg, and finally coat them with breadcrumbs.
Add 4 tbsp of olive oil to a cold frying pan and heat it on high. Test the oil temperature by dropping a pinch of breadcrumbs; if they sizzle, the oil is ready. Add the cod fillets and pan-fry them.
Flip the fillets to fry both sides until golden brown. Drain the oil and plate the fillets.
