  • Fish

    • 🐟 4 cleaned sardines (360g)
  • Vegetables

    • 1 piece of ginger, julienned
  • Seasonings

    • 💧 100cc water
    • 🍶 100cc sake
    • 🧂 2 tbsp sugar
    • 2 tbsp mirin
    • 2 tbsp soy sauce

Julienne the ginger.

Rinse the sardines under running water and pat dry. Remove the tails and cut into thirds.

In a pot, combine the seasonings (water, sake, sugar, mirin, soy sauce), ginger, and sardines. Heat over medium heat until boiling, then cover with a drop lid and a regular lid. Simmer on low heat for 1 hour.

Remove the lids and simmer over low-medium heat for about 10 minutes until the sauce reduces to half.
