  • Cupcake Batter

    • 1 ½ cups brown sugar

    • ⅓ cup white sugar
    • 🥚 2 large egg whites
    • 💧 3 tablespoons cold water
    • ¼ teaspoon cream of tartar
    • 🧂 1 pinch salt
    • ½ cup marshmallow creme
    • 1 teaspoon vanilla extract

Preheat oven to 350°F (175°C). Line 12 muffin cups with cupcake liners.

Beat brown sugar and butter until light and fluffy using an electric mixer. Blend in eggs, followed by sweet potatoes and vanilla extract.

In a separate bowl, whisk together flour, baking powder, cinnamon, ginger, baking soda, salt, nutmeg, and cloves.

Add half the flour mixture to the wet ingredients and stir gently. Blend in milk, then add the remaining flour mixture.

Scoop batter into the prepared cupcake pan. Bake for 18 to 22 minutes, or until a toothpick comes out clean. Cool on rack.

To prepare the frosting: Combine white sugar, egg whites, cold water, cream of tartar, and a pinch of salt in a heatproof bowl. Place over simmering water and beat until stiff peaks form, approximately 5 to 7 minutes.

Remove the bowl from heat and beat for 1 more minute. Add marshmallow creme and vanilla extract, beating until well combined.

Frost the cooled cupcakes using a piping bag or knife.

Using the oven’s broiler, toast the frosting under high heat until the tops are golden brown, around 90 seconds per batch. Check frequently to prevent burning.
