INGREDIENTS
Protein
- 🍗 1 chicken thigh (250g)
Vegetables
- 🍠1/2 sweet potato (90g)
- 🍄 1 pack maitake mushroom (100g)
Cooking Essentials
- 1 tbsp potato starch
- 1 tbsp sesame oil
Seasonings
- đź§‚ 1 tsp sugar
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp vinegar
- 1 tbsp soy sauce
STEPS
Cut the sweet potato into 1cm slices, soak in water, and drain. Microwave with 1 tbsp water for 3 minutes at 600W, then drain. Break apart the maitake mushrooms.
Cut the chicken into bite-sized pieces and coat with potato starch.
Heat sesame oil in a pan over medium heat. Place chicken skin-side down and cook until browned. Flip and cover, cooking for 2 minutes until fully cooked.
Add sweet potato and maitake mushrooms to the pan. Stir-fry over medium-low heat until the mushrooms soften. Add the seasoning mixture and stir-fry over medium heat to coat evenly.
