INGREDIENTS
Fish
- 🐟 1 can mackerel in water (190g)
Vegetables
- 🍠 1/2 sweet potato (90g)
- 🧄 1 clove garlic
Condiments
- 150cc olive oil
- 🧂 1/3 tsp salt
- 1 tsp sliced chili
STEPS
Slice the sweet potato into 1cm thick rounds, then cut into halves or quarters depending on size. Soak in water briefly, drain, and microwave in a heatproof container for about 4 minutes at 600W until tender. Drain excess water. Cut the garlic in half lengthwise, remove the core, and crush with the flat side of a knife.
In a pot, heat olive oil, garlic, salt, and chili over low heat until fragrant. Add the mackerel can and simmer over medium heat. Once bubbling, add the sweet potato and stir briefly to combine.
